As much as we love throwing soirees, we understand that there are some occasions where three is a crowd. While we have catered romantic dinners for two (check out one of our favorite romantic escapades by clicking here!), we're happy to share a delicious menu pairing idea for two.
Beef Tenderloin with a Cabernet Currant Demi-Glaze
Rub your beef tenderloin until packed with cracked peppercorns. Sear one minute on both sides and finish in the oven at 350 until the internal temperature is between 135 to 140 degrees. Let meat rest for 5-10 minutes before slicing.
Finely dice shallots, and sautee in olive oil. Add a cup of cabernet, two tablespoons of black currant jelly, 2 tablespoons of beef concentrate (such as Better than Buillion), and simmer on low until thickened. Then add a tablespoon of finely chopped rosemary. Drizzle over freshly sliced tenderloin.
Olive Smashed Potatoes
Make mashed potatoes as usual with your favorite potatoes (we recommend Russet). Using the flat side of your knife, smash 5 green olives, remove and discard pits, then roughly chop the olives. When fresh off stove, smash potatoes to your desired consistency with a fork, and add the olives, a quarter cup of sour cream, and the juice of two lemon wedges. Season with salt and pepper to taste. Drizzle with olive oil or butter and stir until thoroughly combined. Garnish with a whole olive, parsley, or freshly chopped chives.
Mixed Greens with a Fig Balsamiq Vinaigrette, Fresh Seasonal Pears
Compose a Salad Using:
Organic Mixed Greens
Thinly Sliced Pears (If made ahead of time, soak pears in lemon water to prevent browning)
Spiced Mixed Nuts
Shaved Peccorino Cheese
Drizzled with Fig Balsamiq Vinaigrette (mix balsamiq vinaigrette with olive oil, fig jam and vanilla to taste)
